Pleasurable Pesto Pasta

Who said you need a food processor to make pesto?

It took me a little longer, but making pesto in a blender is in fact possible. I must admit that the first time I tried making pesto in a blender it nearly swallowed my spoon and you may have found a few metal pieces in the pasta (just kidding). That just means the second time you are a little more careful. I especially like the strong garlic flavor this pesto has!

Fresh basil leaves

Pesto tastes better than it looks

Ingredients:

  • 1 large bunch of basil
  • 2 cloves garlic, minced
  • ¾ cup fine grated parmesan
  • ¾ cup virgin olive oil
  • salt and black pepper to taste

Method:

Separate the basil leaves from the sprigs and rinse in a bowl. In a blender, combine the basil leaves, garlic, parmesan, salt and pepper. Blend to combine. Gradually add the olive oil with blender on to create a paste-like consistency. Stop to scrape down the sides.

Serve with pasta or spread on some toasted baguette!
