Last night in honor of the Oscars we had a few people over and made some empanadas. It was the first time I’d had one since our return from Argentina and Chile this winter and had been craving them for a while…I will give our first empanada making a thumbs up!
We decided to go with two fillings, beef and vegetable/ricotta. They were quite easy to make so I won’t go into the details and bore you. For the beef we used a few onions, a few cloves of garlic, one red and one green bell pepper, one tomato, a kilo of ground beef and seasoning (we used a special Brazilian meat seasoning).
For the veggie filling we used one green and one yellow bell pepper, one onion, a few cloves of garlic, one carrot and a can of corn. When filling the empanadas we added a few cubes of ricotta cheese.
As you see, we cheated a little and used pre-made empanada dough found at the local supermarket. They call them “pastel no forno” here in Brazil.
Pop them in the oven for about 20 minutes until golden brown and have yourself a little piece of Argentina in Brazil! 🙂
