Lemon Cranberry Muffins

Adapted from Cooking Books


  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1/4 cup sugar
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 1 large egg, lightly beaten
  • 2/3 cup milk
  • 2 tbsps melted butter
  • 3/4 cup dried cranberries
  • 1 tsp grated lemon zest


1. Pre-heat oven to 350°.
2. Mix all dry ingredients.
3. Add egg, milk and butter.
4. Add cranberries and lemon zest. Fold until just combined.
6. Pour batter in muffin tin.
7. Place in oven and bake 20 minutes or until light golden brown on top.
8. Remove from oven and let cool.
