Mira’s Ukranian Potato Salad

A recipe given to me by one of our dear friends — Mira’s Ukranian-style potato salad is always a hit at summer picnics and a great way to welcome in the warmer weather!

I’m not a big mayonnaise person — that’s Coralie’s job with her French cooking 😉 — but I do love a good potato salad for a crowd. Normally when we put this together the recipe is doubled. Just keep adjusting the ingredients until it is the texture and flavor you prefer.

This salad is a fun mix of ingredients and flavors. I like to keep the skins on the potatoes and apples for additional fiber and color. The onion adds a little bite, as well as bright flecks of color. The salad isn’t too heavy as well, due to a mix of mayonnaise, Greek yogurt, and olive oil. All in all, a delicious take on an old favorite. I’ve made this twice for myself since obtaining the recipe from Mira, and it’s always been welcomed at the table.

Ukranian Potato Salad
Serves 6 as a side dish

  • 1.5-2 lbs potatoes
  • 2 eggs
  • 1/2 c mayo
  • 2 tablespoons olive oil
  • 1-2 tablespoons mustard (I used a grainy dijon)
  • 1/2 c Greek yogurt
  • 1/2 granny smith apple, diced
  • 1/2 red onion, diced
  • Salt and pepper


  1. Scrub and dice potatoes, put in a pot of boiling water along with the two raw eggs. Bring water to a boil and reduce heat slightly, keep at a medium boil.
  2. Remove eggs after approximately 10 minutes, when hard boiled.
  3. While potatoes are boiling, combine remaining ingredients in a large bowl with a spatula.
  4. Once potatoes are soft, put in a colander and run cold water over the potatoes. Peel and dice eggs, and mix potatoes and eggs in with the other ingredients.
  5. Add salt and pepper to taste. Adjust remaining ingredients as necessary. Serve.
